Last month it occurred to me that while I’ve written about restaurants in other cities I’ve never written about any of the ones here where we live. So, I have decided to change that and I’m starting off with Urban Bricks Pizza Company.
Urban Bricks Pizza opened up last month at The Rim. I was really excited when I heard about this place because it sounded very similar to a pizza place we ate in Kansas City that we loved. The concept is to build your own pizza. You go through the line and pick your crust, sauce, cheese, toppings, and drizzle. You can also choose one of their foundation pizzas rather than build your own. The price is also really reasonable at $7.99 a pizza for unlimited toppings.

What I love about this pizza is the thin crispy crust, charred spots, and of course the great taste. The pizza also cooks up really fast so there is minimal waiting. We’ve been twice so far and will definitely be going back again.
